This is the flour that we use in all our breads, and you can use it too! It has a higher protein content than the Unbleached All Purpose Flour and a slightly finer grind. It is great for baking artisan breads, pizza, bagels and other types of bread.
The flour is milled by Highwood Crossing in High River from Canada #1 organic Hard Red Spring Wheat.
